Is it possible to place a visual dimension in an assembly between two different assembly's that have been inserted?

No, but if those assemblies are mated with an offset, clicking the mate in the instance list will show the dimension on screen.

I have clicked on the mate in the instance list as the below print screen but no measurements are showing up. Am i selecting the wrong thing?

Sorry, that was a bit misleading - that only works with slider and cylindrical mates.
