Rotating all 3 axis?

Hallo pros.
I'm trying to cut an edge of a cube, so it can stand on this flat part. But I can't find a way to rotate the "cutting layer" in 3D to the correct angle.
And a second question:
When I want to make a flange on a 1mm thick plate do I have to work with the symbol left of the flange-Symbol? I don't get it to work with my plate.
