Hi i am new to onshape and i am finding it extremely frustrating to use. I am not new to design and work well on other software platforms. I have used another 3d program and that was very easy to use but had limitations i was hoping onshape could elaborate on. I am a neebie so forgive me but i have started with the quick start option and all i am trying to do is create the rectangle resize and the extrude it through the bike stem to make it two objects so it can be attached to a bike handle bars. Easy yes? Not so much i cant seem to size anything. I have look at videos and they seem so easy but i can seem to grasp it. what am i missing? do i double click, hidden size panel? im so confused and i really want to get on and learn and im stuck already.

It sounds like you haven't used parametric 3D modeling software before... I'm guessing any experience you have was with mesh modelers which use a totally different approach.
Please do yourself a favor and go through the learning pathway, specifically starting with this: https://learn.onshape.com/learn/course/introduction-to-parametric-feature-based-cad/what-is-cad/parametric-feature-based-cad
