How to split object with slightly more complex pattern than a plane

I am trying to make two halves of a box. Because of the restrictions on the design of my box, I cannot have the "seam" between the two box halves being the same height all around the box. Therefore, I cannot use the split tool with a simple plane, as this will cut the box into two halves which have the seam height all around.

I have tried many different ways of splitting my box, but none of them work. I feel like is something that would be very common to want to do, so I'm thinking that there must be an easy way of achieving it.

    Create a surface object that includes a vertical part where you want the 'step' in your "seam" to be, which is probably right along the middle of the wall thickness, you can use offset surfaces for this. Then create two horizontal faces: One to close the vertical part at the top edge, and one to go around the lower edge like a skirt. Boolean unite these, if they are not already.
    Use that 'hat shaped' object as the splitting entity, instead of a plane.
