how do I set default viewing mode (shaded with edges)?

I seem to have to set it for every single model I look at

Right click on "shaded with edges" and select "make default" (or whatever the exact wording is). Also you must have changed at some point as shaded with edges is the default setting

If you right-click on the setting in the view menu, there it will pop up "set as default." This appears to apply at least to all tabs within a document, not sure about across documents but I recommend you give that a try.
