Course regarding making for 3d scanned objects

Hi Onshape
I'm fairly new to CAD, started some selfpaced courses and are loving it!
I do however look after look for a course for when you have a 3d scanned object, from which I want to a change to/add new parts.
Can anyone point me in the right direction of a course regarding the needed insight for this type of drawing?

Thanks! I'm sure there is still a lot of room for expertise in this area. Those were are experiments from someone that doesn't really use scans all that often. I'd love to see more case studies of production use.
