How do I add variables using the iPad client?
I’ve searched the forum and here, there’s videos showing vars in the iPad version, but I can’t see them in the sketch tools dialogue. Can anyone tell me how to do them please?

You'll need to create the variable(s) before creating the sketch or features.
The Variable option can be found in the Features dropdown, (x) Variable button in between Derived and Composite part.
Once in a sketch or feature you can call up the variable by entering #<variable_name> in the desired field
