BOM Keeps Clearing Data - I Must Be Doing Something Wrong

I'm designing copper piping for my new heat pump hot water system. I have a document that contains many copper parts and a few assemblies.

I also have a document that contains the steel tank and the garage wall around the tank as parts. With an assembly for the tank and wall. Eventually it will also have the drip pan.

I'm getting close to finishing and need a BOM to order all the fittings. Initially I tried adding the part descriptions to the assemblies and then to individual parts in that document. Everything seemed to be working fine. Then I realized that given I have many instances of a bunch of parts that I should place the description in the copper piping document. That way I am only entering the description once for a specific fitting.

Once I got all that done, I went back to the BOM and all the individual descriptions are now blank. It kept the assembly descriptions, only because I didn't add the description in the steel tank & wall document.

What am I doing wrong? Shouldn't the description be associated with the part? That way those would role up into the assembly drawing.
