When trimming, for example, many packages detect the user's intent based on click location. For example, if trimming a surface, clicking anywhere on the left half will cause the right half to be removed by the trim operation, and vise verse. The user can then flip the direction manually if necessary.

Can FS do that?

Not today -- the user can instead click on an edge or a vertex to select a side -- evDistance will return uv coordinates on the surface.  Having a direct uv input is not a no-brainer because storing uv coordinates as a feature parameter is likely to not be robust to upstream changes.  So to support the type of workflow I think you're talking about, I think we'd need a way to convert the data into a more robust form.
