Hi guys, I have a STL-related question as I start importing STLs into onshape...is there a way to tell onshape that "this distance is 20mm -> resize the whole thing accordingly" ?

You can't put a measurement from the mesh directly into that feature but here's what I would do if I had to scale a mesh in a way other than changing it's units.
- Select the two points that I know that I want to have a certain distance apart
- In the measurement area in the bottom right the distance is now shown (as when selecting points of regular solids).
- A bit of math to work out the scale
- Use the Transform feature to scale the mesh
