can i visualize a projekt with a gantt diagram?

Interesting question. I was asked that years ago, when still on my old CAD. The intention was to align the CAD project with shop flor management. I found a way to extract the assembly tree as an XML file, and that could then be turned into all sorts of diagrams. Depending on what you're up to: Would the BOM be a good starting point for this?
Do you mean a diagram of the connectivity of a document or between documents? I've done something similar recently for finding circular dependencies and duplicated versions. Something like this could be modified to work for part studios as well:

I assume the original post was about a Gantt chart for tracking tasks, subtasks and milestones in a project.
The quick answer is no, Onshape doesn't do that.
