Variable offsets in Onshape vs Fusion 360

Morning all,
I am trying to migrate myself away from FS360 to Onshape.

I have built myself a CNC by V1 Engineering and when I make a plywood item that has tabs in it in Fusion I can apply an offset to the side of the cut slot in the target piece of say 0.7mm. I can do that for all the slots in the design and vary that. Reason being that the machine is not a $25k setup with wafer thin tolerances.

I can't seem to find a way to do it in Onshape. I can offset the face by a variable but it leaves a second face sort of? It does not push back the surface to allow room for the easier fitting together of the tab/slot in the finished item.

What am I missing here?
