So I decided to take some time and change the approach.
I've used a lot of the code from @NeilCooke 's mold & die custom features so Kudos to Neil!
this approach allows using the original surface and also allows control over what loops to close/not.
Moreover it integrates the Extract functionality without approximating.
for pure B-splines it would be nice to be able to expand outer edges to the original U/V data, but i can't figure out how to do so yet. for now this should do. I guess in that sense it may not perform as your original post expressed @S1mon: leaving the surface as clean as it was. but for generic work, it may suffice and be easier than manually moving boundary edges

That's a lotta guides!! 1st question would be. do you really need that much control on the surface? I would strongly suggest reversing your approach and make your guides your profiles and your profiles your guides. In either case…post your document link so that others and myself can take a look to see where the issue is.

Make the bowl bigger. In this case, #Diameter = (132 mm + 0.1 mm) + (2*0.1in).
Also, consider taking this course to learn about multi-part part studios.

After the fact, probably not, but you could use my Part Color custom feature in conjunction with a Variable Studio to set it up so that it's easy to change next time someone has a mercurial whim. Here's an example. These are different parts from 2 different part studios updating the hex code from the variable studio.

There are multiple aerospace companies creating real planes etc. with Onshape. Is it easy to make complex shapes like that? No, not for a beginner. There are other tools out there which could be used to quickly make something that is roughly plane-shaped. Would a real company use those CAD models to base real production off of? No.
Aerospace and automotive is where CAD began. The Parasolid kernel that Onshape is based on is used by countless CAD tools including NX (nee Unigraphics), which got its early start at McDonnell Douglass (which became part of Boeing).
So can you make planes with Onshape? Yes? Is it easy without spending a bunch of time learning the tool? No.
