Is Extrude only linear?

Not sure my question makes sense. What I'm trying to do is extrude, but not in a linear, block-like way, but angularly, like a valley or a mountain, which will result in 2 planes of extrusion instead of 3. Can Onshape do that?

Are you trying to make a thickened letter V or a sheet body? if a sheet body, then draw a non closed sketch, select extrude, select Surface, then select the sketch edges you want to extrude.0 -
