How to you cut something something off set from the surface?

Im trying to cut something off set  from a surface but the only thing I can find is up to a surface.

    @peter_oakland Three workarounds.... Use the offset surface to create a plane and the offset you want and then extrude to the plane. or Use a sweep with a straight line for the sweep path dimensioned with the offset you want. or Create a very short extrude and use Replace Face on the short extrude which has an offset built into it.
