OpenBOM is passing data to Onshape drawing module, which is used by Onshape insert BOM command.
You can use Balloon Number property in OpenBOM to order BOM in the drawing.

Coming release will allow you to rename properties in OpenBOM (including hardcoded Onshape property names) to show in Drawing BOM differently.

Although we are not controlling "Insert BOM" command (it is done by Onshape), we can think about applying running number in Balloon Number property (1, 2, 3, ...). Would it be helpful? Is it what you are looking for?
