You can find instructions on how to create an exploded view here : https://learn.onshape.com/courses/exploded-views & https://www.onshape.com/videos/exploded-views-in-onshape .
You'll need to use a screen recorder to capture the animation. You can find links to screen capture tools here : https://forum.onshape.com/discussion/242/best-way-to-record-gif-video-of-using-onshape.
Hope that helps.
Paul
I arrived here searching for the same feature (exporting exploded views as video/animation).
I know it's an old topic, just to let you know that both links provided by Paul are now dead.
Also, even though I use a screen recorder application, the exploded view feature does not animate as of today. It just shows different configurations instantly, without moving animation, so recording it is not very useful. Maybe there's another way to animate the exploded view ?
Thank you for pointing out the dead links. Here are updated links:

We do not have the ability to animate exploded views, the closest way to do this would be to move the exploded view rollback bar, this is Tip #1 in this article : https://www.onshape.com/en/resource-center/tech-tips/10-advanced-tips-for-creating-exploded-views.
