How does one change the direction specified in a bend note. From saying Down to UP?

You can't modify a bend note. (Create an improvement request if you really need it)
But Honestly you shouldn't need to change up/down. The correct flat pattern should exist. If you are just trying to make a mirror you can mirror the part in a part studio and it will generate the correct flat pattern as well.
But if you are trying to 'cheat' I suppose you could hide all the bend notes (Right click on the view and choose hide bend notes) Then manually enter every bend note.
Or if it is only one note try "scribbling" it out with ANSII Art

Same concern here and I would like to see the ability to have the coplementary angle shown.

i find they can be in the way while you set up the rest of your drawing. sometimes there so big it overlaps on other bends
