How do I select just a corner to be filleted rather than the entire edge?

You can only select faces and edges with fillet.
If you select multiple edges that intersect. It will give you a soft corner

cameron_shaw_doran you may want to try and turn tangent propagation off. It's on by default and picks the entire curve pieces if they're tangent. Sounds like you don't want this on.

it turns out it was something very simple!
I just had to turn the drawing to be able to select the side edges of it (not the front edge) the instructions picture wasn't very clear
