I would like to have the helix start away from the edge (1-2 turns in), I figured the obvious thing to do was to set the starting angle at 360 or 720 degrees, but that seems to have no effect

I sketched on a mate connector that is offset from the face by 10mm, and just used the Use or Intersection tool to make the new starting edge of the helix.
