How can I get my assembly to look like the blueprint mode seen below?

What you are showing there is the proxy bounding box outlines drawn during navigation. We don't have a mode where you can render those out however there are some options for stylized rendering. Some of these are shown in the documentation here: https://cad.onshape.com/help/Content/render-studio-interface.htm#view-tools

Scroll down to the "Style" section which shows some examples. If you want more control over the base appearance used to generate this you can select the "rootgroup" in the scene graph and set it's appearance to override, it will then take over any appearances assigned further down in the scene graph (but you can easily turn off the override to later get all of your appearances back).

The above is using the stylized render view. As you can see however this stylized mode is not really designed to work with transparent appearances. In the above I made the rootgroups appearance "Transmission weight" 0.5 and the "IOR" (under the global group) 1.0. If using opaque appearances then you can directly control the colour of the objects with the appearance and the colour of the outlines with the stylized rendering options.
