Is there any way I can add a rough finish (like a sandstone surface or Cura's Fuzzy skin) to a surface within onshape?

Hey @paul_everington, it is possible to create larger textures like knurls or patterns. See this post as an example Texture. The textures you mentioned are most likely too detailed of textures for Onshape to handle in the part studio.
Is this only for appearance or are you trying to 3D print the model?
If you are only going for appearance, Onshape's Render Studio can achieve almost any texture you like. Though you would need either a Pro or Enterprise account to access the beta.

do I need a paid account in order to add texture or surface finish to a part, id like to get more in depth with 3d printing. I am a hobbyist if it matters.
@benjamin_gregory Free accounts get custom features too! Just open the document for that custom feature then click the (+) button near the top middle of the screen.
