How do I sketch on face of sheet metal model?

When I create a sketch on sheet metal, I try to select the face of the part as the sketch plane, but a face of a previous feature, usually a hole, gets selected. This is annoying because I lose subsequent sketch planes when I edit features. I end up having to sketch on one of the coordinate system planes to make my sketches resilient.

That is my general approach, except my sheet metal usually has planar faces, so I don't usually sketch on the flat pattern.
When I get a chance, I will try to make a similar part in a new document that I can share. This is currently happening on a part made with 64 features, including many in context references.
