Working with 3D scans

I want to scan a item, them use the scan to make parts that attach to those items but I cannot find a good tutorial that shows me how. It looks like a scan has no plane, so I have to make a plane and then model around that.
How do I model around it? Youtubers just skip the details. Can anyone direct me to a video or tutorial that shows this?

Yes Evan. Sure did. Thanks so much for answering my post. I have watched it many times and it is slowly sinking in but still a little to fast for me.
I restore old VW's and there is a old book called "A manual of step by step procedures for the complete Idiot".
We need a video like this!!. I bet you get crazy views on a video like this :)
For example: I have a tool Dremel tool that I have 3D scanned and I want to make a holder to mount it to my work bench.
Once I have the scan and have refined it in the scanner software, how do I import that scan into OS, then model around the scan to make a part that I can print?
I have seen some videos of a program called GOM to set the plane using 3 point selection and then saving that and import into CAD.
