Struggling to use Constrained Surface, need tips/tricks/help

Hi, I am using Constrained Surface to model on top of a mesh of a flight stick. I initially selecting the mesh body for the stick as a reference, which didn't load, regardless I did not wish to have the inset where a grip rubber would be. I am using constrained surface for individual parts of the stick, & I cannot understand in which order should I be selecting vertices to form a symmetrical shape. What I have made is symmetrical, ("Constrained Surface 1" a surface wrapped underneath the bulb of the flight stick grip) but it is not in line with what I wish to be making.
I really could use some help in my approach to using Constrained Surface, because akin to Loft it seems to need some sort of guide spline , but I am quite confused.
I will keep working on this problem with other methods & if they work, i will mark this resolved & explain my method.
