How do you select what parts do or don't get included in a view on a drawing?

I have a large 'master model' for an assembly and wish to create a set of drawings to show several different views. I would like to be able to create a drawing of the entire assembly and then de-select some items from the view, or choose which items to create a drawing of. This is akin to using Rhino or Autocad where you could select whether layers are shown or not in a viewport. I hope I am missing something obvious since this is really an essential feature!
