Whats the best method to draw a reception desk like this one in onshape without the need of new planes for every polygon? thx a lot for any advice

Hard to tell from just one angle. But initially I’d try a loft with top and bottom profiles
ok, but what if there is conjunction in between? any method of just placing dots in space an then connect? without multiple planes?

The dots, require sketches, and the sketches require planes - I don't think there is any way to get around this (don't let planes scare you). My advice to you would be to take the self paced courses in the "learning center", lot's of them are free, and quite well laid out. But this is not a twenty minute thing - it will take some time to absorb it all.
If this investment in time doesn't seem worthwhile to you, or you are only doing this one-off project and have a deadline, then you might consider hiring someone to complete this model for you. It is relatively straight forward, and shouldn't take much time to complete.
I encourage you to keep at it, and learn Onshape - you never know if you'll need it in the future.
Not sure what your concerns are. start a part add a plane for top surface. draw 2 sketches on each plane for half of it. loft it and mirror. done. don't know what a conjunction is.
