I'm up for a new laptop, what would you recommend for the ideal configuration for running Onshape?

For professional use, get at least 24GB of ram. It will make a difference for larger assemblies.

Yes, and even though it is often said that super performant hardware is less important in an SAAS environment, and I agree with that, I have seen that a decent graphics card ist also worth something. The navigation is much smoother and fewer glitches with large assemblies. I'd consider that for a pro setup, not necessarily for hobby use.

I have upgraded mine to 64GB RAM because I often run other programs in parallel and do not want my laptop to start swapping memory around while I work. Having is better than needing, and RAM is relatively cheap these days.

The other component that speeds up CAD work is screen area. The larger the better. You'll probably want an external monitor anyway, I guess? Then the video chip, be it onboard or a video card, should support a decent one as well. And if it is a laptop, go for one that has a number pad, because that speeds up input of numerical values, which is frequently needed in CAD work.

Make sure it has a dedicated graphics card and some ram.
Here are some real world benchmark results you can use to compare:
