So im working on an aircraft model and I can't get the lofts to behave in the way I would like I want to have it so it follows a side profile whilst also following a top profile to ensure the surface of the loft is smooth and I can only ever get one not both could anyone offer a fix to this issue

It's hard to tell what's going on. Can you share your model?

It would be easier to diagnose if you allowed others to make a copy to try and reproduce the problem. Maybe you don't want that…
Your side control curves need to 100 percent be coincident with the start and end curves. You have a 3mm gap on this one i checked.

…And, I believe this is where the Pierce function is appropriate. Many years of CAD but new to Onshape so hoping this is correct application Pierce.
okay ill try it thanks ill also yeah allow copys to be made if that will mean you can help me better thanks should be able to make a copy now :)
Surfacing takes a little more of a purposeful approach.
You need to start from the beginning with the first sketch and clean it up:
Delete oddities like this unnecessary constraint.
Make the ends of each spline tangent to the next spline (if appropriate.)
Like shown below. They are still separate splines but are now tangent at ends. This will help when creating the surfaces.
Go through and clean everything up on the first sketch then move onto the subsequent sketches.
I dug further into you model and you have a lot of wonky techniques you're trying. If you really want to learn surfacing it would be best if you went through some of the free training that Onshape has.
This one on Introduction to surfacing:

And Onshape Surface Modeling:

I'll fix a small section of your model to get you going (tomorrow.)
@hugo_adams highly recommend surfacing tutorials linked by @SMURFCAD
