Perspective View

I work in perspective view in my architectural cad system and would like to have it always turned on as my default for Onshape...is that doable?
Its just more like real life.

Its under the view cube, on its drop down. "turn perspective on"

Yes I'd love to toggle perspective view on / off with a button on my SpaceMouse Pro. If would be great if this could have a keyboard shortcut.

I don't know for Onshape (never tested) but I remember that when using Autodesk Inventor, perspective view was pulling so much graphic power from my GPU (which was recent and powerful) that I stopped using it.

I usually don't use perspective view in OS because it has an overly wide FOV and creates too heavy distortions, not looking natural at all. Maybe it's just me, but I also have the impression that the distortions get the greater the larger the screen is. On a 4K screen it is already pretty ugly and on the even larger one in the meeting room, it is pretty much unusable. If there is a perspective view in the modeling tabs, there should also be a setting for FOV and another setting to hide all faces that get behind the camera while navigating though the model. Especially for architecture, that would open up possibilities for a walkthrough mode, which, in combination with the follow me mode, could be quite useful.
