I'm struggling to import a model of a men or women with real size on my onshape document. What is the best way and where to find the right STL ?

Or try grabcad or some other model download site:

You can download most formats from grabcad and upload them into Onshape.
I would avoid STL as they will come in as a MESH and that is basically useless unless you are designing a glove or medical accessory.
