What is the technique that replaces trimming surfaces??

Hey Folks,
I am used to a number of cad systems where the modeling strategy for complex surfaces involved "over-build" and trim back - basically sweeping or lofting large blankets of surfaces and then trimming them to achieve your desired shape (before thickening). I'm still pretty new to Onshape but there does not appear to be a surface trim command. Am I missing it? Or is there a different technique to replace this one? Thanks!
