The latest openBoM update allows to sort BOM in Onshape drawing by Balloon number
You can get details here.

I am wondering now if I can change Quantity to Qty. and Balloon Number to Number or No. ? This would reduce the width of the columns with only small numbers in them to save space. Also help as the table resizes when doing an update in the drawing

Unfortunately, you cannot rename these properties in current versions, because of the way we hardcoded them in Onshape openBOM template. But we are aware about the problem of property customization. We are working to provide user defined templates to support customization of Onshape BOM and we would considering to support alias to property there (today it is supported for regular openBoM properties). A possible workaround is to change property names already in Onshape for the moment. Sorry about this limitation for the moment.
Best, Oleg
Is there a way to get the new properties into your an existing OpenBoM now included in the Onshape Doc, ie Vendor, Titles 1,2 &3 ?

Not for the moment. It will come in April with the next openBoM production update.

It is possible now to rename all properties in OpenBOM and they will come to Onshape renamed.
