The latest openBoM update allows to sort BOM in Onshape drawing by Balloon number

You can get details here.

Just working out how to get a OpenBoM into a drawing. The video on the link above was helpful to get the columns in the right positions.

I am wondering now if I can change Quantity to Qty.  and Balloon Number to Number or No. ? This would reduce the width of the columns with only small numbers in them to save space. Also help as the table resizes when doing an update in the drawing

Unfortunately, you cannot rename these properties in current versions, because of the way we hardcoded them in Onshape openBOM template. But we are aware about the problem of property customization. We are working to provide user defined templates to support customization of Onshape BOM and we would considering to support alias to property there (today it is supported for regular openBoM properties). A possible workaround is to change property names already in Onshape for the moment.  Sorry about this limitation for the moment.
