how do you know you are supposed to sketch on which plane and quadrant

    Umm.. It doesn't matter.

    The three starting planes are just there to give you somewhere to start.

    If your first sketch is of the top of the part, start on the top plane. If your starting from a side then the right plane might be the place to start. If the part is symmetrical use the origin as the middle point then you can take advantage of the planes and mirror commands.

    It will makes it a bit easier if the top of your part is the same as the top of the view cube for example, and the front view is the front view you want when inserting into a drawing but I don't think any of these things are end of the world.

    Try the learning center to get a feel for onshape.
