In respect to surfacing Onshape is really not less capable then SW, SE or Inventor. In any of those CAD's you would make base spline cage and then make lofts, sweeps and patches. So firsly it all about spline cage definition, and the main instrument for this is "Intersection curve". Sadly OS doesn't have builtin freeform… -
