in Drawings
Is it possible to insert a named view of an assembly into a drawing? Custom named views do not seem to be appearing in the 'insert view' function on a drawing for an assembly.

Yes indeed.
Create your assy and then the named view, and then your custom view will appear in the "insert view" feature.
Here you can see I've created a custom view normal to one of the sides of these extrusions and have called it "My Custom Assy View". I've inserted the standard 4 views and then on the far right I've added a fith which is from my custom view.

Hope that helps.

Is this possible for perspective view or is there any other way of being able to dimension up an assembly in perspective view?
No, it isn't possible

I'm not seeing the named view option. I followed your instructions to create an assembly and a named view in the assembly, but I don't see my named view in the "Insert view" feature.
It would be really nice if perspective views could be inserted into drawings.
