Modelling parts to fit real world products

Hi Guys,

Just wondering how you tackle something like the following. If you wanted to design a controller grip for an xbox controller (random example) how would you go about doing this? There is an existing shape in the real world to fit but modelling around the curves isn't something I'd know how to work out? A raspberry pi board is a lot easier as you can get a ruler on it or look up dimensions but curious how you'd go about this kind of scenario?
